Air Fryer Rustic Tempeh Panini

About the Recipe

I made this Rustic Tempeh Panini recipe using my air fryer, but you can roast the tempeh and veggies in the oven. Top with a delicious homemade goat cheese mayo.

If Not This, Then That...
⬆️🥑 To increase fat, use full-fat Miracle Whip.
⬇️🥑 To decrease fat, omit goat cheese mayo and use low fat spread of choice.
⬇️🍳 To decrease protein, omit tempeh.
⬇️🥔 To decrease carbs, omit bread and serve on baby spinach.

Ingredients

  • 10 slices low-sodium Ezekiel bread

  • 1 package original empeh, sliced thin

  • 107g green bell pepper, sliced

  • 85g yellow bell pepper, sliced

  • 254g yellow squash, sliced

  • 54g yellow onion, thinly sliced

  • 52g red onion, thinly sliced

  • 500g carrots, sliced thick

  • 305g whole green beans, ends clipped

  • Spices (1/2 tsp ea., divided): ground black pepper, roasted garlic powder, Italian seasoning, minced onion, dried basil, dried parsley

 

For goat cheese mayo:

  • 56g plain goat cheese

  • 30ml light Miracle Whip

  • 5ml balsamic vinegar

  • Spices (1/4 tsp ea.): ground black pepper, roasted garlic powder

Preparation

  1. Preheat oven to 325 degrees; spray two baking sheets with olive oil, set aside.

  2. Slice tempeh, peppers, squash, carrots, and onions.

  3. Arrange peppers, onions, squash, and tempeh on one sheet, and carrots and green beans on the other; sprinkle each with spices (1/4 tsp ea.), then roast for 12-15 mins

  4. .In meantime, toast each slice of bread; set aside.

  5. As bread toasts, pop goat cheese in microwave for 30-45 secs to melt.

  6. Add melted goat cheese, Miracle Whip, balsamic vinegar, and spices to medium bowl; whip until well combined.

  7. Arrange bread on large cutting board; spread goat cheese mayo evenly across each slice.

  8. Add 1/5 portion of veggies and tempeh to one slice, then top with second slice; repeat four more times.Grill each sandwich on panini press or stovetop, 3-5 mins each side.

  9. Cut panini diagonally; add to its own container, and serve with carrots & green beans.
